Dear Jennifer,
March is an exciting month for Mattison's, and there are plenty
of great events to attend around town.
The All Faiths Food Bank has a special place in my
heart, as I served on the Board of Directors for six years. I
encourage you all to attend their Taste of the Suncoast
event this Thursday, March 8; enjoy a variety of delicious food
by some of Sarasota's best restaurants and support a great
organization at the same time.
Remember, Mattison's is committed to being
successful, one client at a time. Feel free to e-mail
me personally at
chefpaul@mattisons.com
with questions or comments any time.
Enjoy!

Mattison's Wins Annual Girl Scout Cookie-Off
|
 |
Mattison's Chef Ben Christopher and Chef Douglas C.
Ricciardi donated their talent, time, and ideas for this
annual fundraiser to help support Girl Scouts on the Gulf
Coast of Florida. The winning recipe was their own
Thin Mint Zabaglione with Wild Berries, a
dessert greatly admired in Italian cuisine and also
represents their passion and background. Zabaglione dates
back to 16th century Italy.
Mattison's Thin Mint Zabaglione with Wild
Berries
, serves 12
Ingredients
1 sleeve of Thin Mint Cookies, 10 egg yolks, 1 cup of
sugar, 2 oz Crème de Mint, 2 oz Godiva Chocolate Liquor
(or chocolate extract), 2 pints of fresh wild berries (black,
blue, and raspberries)
Equipment
12 long fluted glasses, medium sauce pot with 2 cups
water, metal mixing bowl that fits on top of sauce pot,
cooking whip
Method
Place sauce pot of water on stove and bring water to a boil.
Turn down to low, place metal mixing bowl on top of pot.
Add egg yolks, sugar, liquor, and crème de mint to bowl and
start whipping mixture until froth starts. Whip froth until it
takes on the look of lightly whipped cream. Set aside. Fill
glasses with crumbled thin mints and mixed berries. *Note
cut strawberries in quater slices. Spoon on Zabaglione
(chocolate
mint egg yolk mixture), garnish with Thin Mint Cookies.
Enjoy!
