Dear Jennifer,
The season is certainly not over yet. There are so many events
and festivities in the month of April, of which we are excited
to be part. From Film Fest to Winefest and so many in
between, there are plenty of activities for everyone. Remember,
regardless of which event or events you plan to attend, they
are all great causes helping to better our community.

| Corey Carr Mattison: May 10, 1987-March 14, 2006 |

On a personal note:
Please let me share with all of you a recent tragedy in my
family's life. On March 14, 2006 my nephew, Corey Carr
Mattison left us suddenly and peacefully at home due to natural
causes. None of us will ever understand why, and our lives will
never be the same without him.
Corey touched my life through his love of nature, music and
family. He was generous, kind, adventurous and strong, and he
and I shared, among many things, the love of good food.
He was attending Binghamton University, and was headed to
the School of Industrial and Labor Relations at Cornell
University in the Fall.
Corey had strong values, a keen sense of justice, and a great
sympathy for the working man. He wanted the world to be a
better place, and was driven to make that happen.
He accomplished so much, so fast and what he left each of us
will forever be kept in our hearts. I will always remember
everything I loved about Corey, all that we shared, and I will
celebrate him often. As his father and my brother, Darryl
said cherish your children.
We want to honor Corey forever, by offering an annual college
scholarship, to students with similar goals, integrity, and the
values in which Corey believed.

Last weekend, March 30-April 2, St Petersburg hosted the
second race of the season for the IRL Indy Race Car Series. Not
only did Mattison's Catering Company host the
American Honda Reception at St. Petersburg Museum of Fine
Arts but Chef Paul Mattison and lifelong friend and business
partner Jason Sango enjoyed the opportunity to take a
200 mph back seat ride with driver Davey Hamilton who
emceed the nationally televised race. "What a thrill it was"
says Chef Paul Mattison.

We have organized a wandering culinary journey through the
region of Umbria and Tuscany followed by a visit to the very
best sites of Rome. In Umbria we will visit the towns of Assisi
and Perugia, and in Tuscany, we will also visit the town of
Terme di Rapolano, famous for its spas and natural hot springs.
A very special tasting of balsamic vinegar and local cheeses
has been arranged along with a tour of Montalcino, the home of
one Italy’s great red wines Brunello. We will spend time with
experienced, local chefs in Orvietto and tour the wine and olive
oil estate, La Cacciata, of the Belcapo family who will further
educate you in the use of olive oil along with a short tour of
their winery and olive oil press. Pienza, Rome, Florence and
Siena are not far and we have planned tours of each of these
charming, romantic and historical cities as well.
