Paul Mattison's Beer Braise Bratwurst with Warm Vegetable
Kraut

Ingredients
2
lb bratwurst
1
pint beer (Stella)
2 lb fingerling
potatoes
Extra
virgin olive oil
1 lb green
cabbage, shredded
2
carrots, shredded
3
stalks of celery, shredded
2 tablespoons caraway
seeds
1
medium size white onion, shredded
1
green apple, peeled, cored, and shredded
1
Bay leaf
1
cup chicken stock
3 tablespoons
½
cup white balsamic vinegar
Procedure
Place
sausages in a skillet drizzled with some olive oil at medium-high heat, for two
minutes; add the beer, and lower the heat to a slow simmer and cook for eight to
ten minutes. In a large skillet, add two table spoons of olive oil, at
medium-high heat; add the cabbage, cook for one minute; add the rest of the
vegetables, toss well to combine; add the bay leaf, caraway seeds, sauté for six
to seven minutes; add the vinegar and chicken stock cook for an additional two
minutes; add the mustard, stir well and turn off the fire; season with salt and
black pepper and set aside. In a separate skillet, add some olive oil at high
heat, place the sausages to brown evenly and to get a crispy for about two
minutes; serve with the warm vegetable kraut,
